Probably due in part to improved circulation of the Lymphatic system. I know one elderly lady who jogs daily, she is very fit and claimed that it reversed the graying of her hair.

At the time i was doing gym workouts 2 times a week and running almost daily. It was also when i first became a vegetarian, too.
